Wagyu 101: How to Grill the Perfect Flank Steak
Flank steak is one of the most versatile cuts of meat. Not only is it relatively inexpensive compared to similar cuts, but it can also be used for just about anything. Whether you’re making fajitas, tacos, steak sandwiches, or even healthy bowls, flank steak is a perfect choice. And when it comes to picking the very best flank steak for any of these dishes, the answer is always Wagyu. Our very favorite method of cooking Wagyu will always be grilling, and flank steak is no exception. But don’t worry, grilling Wagyu isn’t as complicated as you think!
Prep Your Meat
Before you grill your Wagyu flank steak, allow it to come to room temperature for at least 30 minutes before cooking. This will ensure it cooks evenly. You could also season your steak at this time as well. Usually, with most Wagyu cuts, you don’t need a lot of extra spices—the marbling is the main source of flavor. However, flank steak does work well with marinades and spice rubs. If you don’t have a particular flavor profile in mind, go with a simple mix of high-quality olive oil, kosher salt, and freshly ground pepper.
Grilling Wagyu Flank Steak
Once your grill is at least 400 degrees Fahrenheit, your flank steak is ready to cook. Remember, flank steak is a relatively thin cut of meat, so it will cook quickly. To create a delicious seared crust, begin by placing your flank steak in the center of the grill and cook for 1-2 minutes per side. Then flip and continue cooking for another 2-3 minutes per side. To achieve medium doneness, aim for a finished temperature of between 130-140 degrees Fahrenheit. Once it’s done, remove your Wagyu steak and allow it to rest for at least five minutes before slicing.
Slicing Flank Steak
Once your flank steak is rested, slice with a very sharp knife against the grain. The thinner the slices, the more tender your beef will be.
