Skirt Steak (American Wagyu)


Skirt steak comes from the plate portion of the cow, just in front of the flank. It’s long in shape with a hearty, full-bodied bite. Because of its similarities, skirt steak can be substituted for flank steak in recipes. This intensely flavored American Wagyu cut does well in marinades and tastes best cooked at high temperatures.
