Osso Bucco is Italian for “hole in bone” or “pierced bone.” This cut comes from the marrow hole at the center of the cross-cut shank. You can serve a classic Osso Bucco meal with the traditional risotto, but it also pairs amazingly with mashed potatoes or roasted root vegetables.
